Day 5: DINNER | what a day yesterday was! I was a busy wee bee buzzing about the town. I’m trying to get all sorted and organised ready for the schools breaking for summer on Friday 🎓 I’ll challenge anyone that says maternity is boring and quite lonely.... you literally never stop. I’ve got 5 whole weeks before it’s back to work for two weeks worth of KIT days and then that’s it..... maternity leave is over, and I’m filled with a massive mix of emotions 💫
Breakfast yesterday was a quick and lazy banana and Apple with a green tea
Lunch was my chicken salad which I prepped the night before with a bottle of water (don’t forget your cutlery guys)
Dinner was this wee beauty! Gammon and loads of veg! I simply boil the gammon with 2 bay leaves and black peppercorns. I use unsmoked gammon as I find it less salty. I cook for 1 hr 20, flip it over and cook for a further 20 mins. Roast tatties cooked using spray oil and black pepper. Lumpy gravy obviously made by husband 🙈
A while back I told @malenefl that I thought she should have this illustration put to print. Because it is gorgeous and because the message is so important.
Yesterday I received an unexpected package in the mail, containing a birth gift: this beautiful original illustration, a pack of chocolate and a wonderful and heart warming letter about the things I share here on Instagram. And of course I cried right there on the balcony.
Because this is such a grand gesture to me. Knowing that my words make a difference for people out there, people I have never met. And knowing that the world contains people like Malene, who sends a gift to a person, she doesn't know in real life. Just because, as she writes. It gives me such a sense of hope for this world.
