Currently wishing I had this because I haven’t had much time to prep elaborate breakfasts this week 😩  life’s been busy, and I’ve been having fun 🀷🏌‍♀ also things I’m currently obsessed with: @effifoods granola because it has SO much flavor and sunflower seed butter (been using @traderjoes ). ⠀

Overnight zoatsssss: 1 container plain @kitehillfoods almond milk based yogurt. Only flavor I like to use because all of the others have added sugars, I also LOVE @lovvelavva for plant based yogurt. Honestly nothing beats it but bought what was on sale. 1/4 cup @momsbestcereal oats, 1/4 zucchini shredded, 1 scoop coffee, coconut and MCTs @nuzest_usa protein, cinnamon and mashed banana 🍌 then topped with @effifoods raspberry, @specializedbeeproducts bee pollen, chia, and a hefty drizzle of sunflower seed butta. This whole experience has been hard for me. Yesterday before going to bed I sobbed for a good 30 minutes (mind you my third time in like two weeks) just because I wanted to go home. I have a lot of emotions flowing, not just about my program and the pressure of needing to do well to pass, the fact I really don’t the convenience of where I live/ where things are, but being the in whole storm of med school applying. ⁣
-⁣
When I applied last year, I didn’t necessarily talk to a lot of people applying about anything, because I know how insecure and afraid I get about it. Well here we have classes were we do. and it freaks me out. and I can’t do anything about that, but piled on with a ton of little things that shouldn’t bother me it does. For example, I did bake yesterday, but I didn’t post that I burned myself taking the pan out of the oven (its a small burn dw). My back hurts from carrying my laptop and charger for around an hour and a half from the gym and classes, and I screw it up even more while I study. ⁣

But that’s life. Now if you read through that whole rant thank you, because I’m trying to dispel all those negative little thoughts that have been building up. Breathe out negative energy, breathe in the good amirite 💆‍♀⁣

I had a ripe watermelon that I turned into juice for kombucha but I would be lying if I said I wasn’t skeptical of the finished product, until I had it.

Using over tart tea balanced the watermelon sweetness and managed to make a great kombucha that is even better spiked with a bit of @aperolusa for a perfect summer drink!

Most of the time people underestimate this amazing pudding, but WHY? When it’s:

3. AND has so many BENEFICIAL nutrients, such as omega -3, antioxidants, fiber, iron and calcium!

Soak 2 tbsp chia seeds in 1/2 c liquid 20 mins or overnight .
(I use almond milk, as I find it gives the pudding a nice texture) .

Then top with anything and everything! I recommend roasted PEAR and ALMOND BUTTER! .

I've spent most of my adult life masking my emotional problems by trying to fix everyone within reach. It's why I'm in the career I am, to help fix what appears to be broken as if in fixing something or someone else, it would magically fix me. 
I also told myself I didn't think I had that many problems - at least not enough to warrant therapy. Which is probably the phrase that keeps 80% of people out of counseling.

So I proceeded to do what most people do - keep themselves so busy assuming my problems would magically disappear. Distracting myself with outside problems and manipulating conversations by asking ample questions so I never had to be questioned myself. .
But then I was presented with the fact that I had reached a healing threshold. That nutrition and movement, even sleep and supplements would only take me so far before I hit the ceiling. That ceiling is the emotional one we all try to avoid. .
It's like a glass ceiling - you can't necessarily see it until you hit it. And when you hit it you feel it. . 
So I signed up for thearpy {or counseling or whatever you want to call it} and I've never turned back. I'd argue that it's one of the worlds best kept secrets - a place to share all of your secrets in secret. And not just share them but take the lies, the hurts and fill them with truth. .
For real - I want to scream it from the mountain tops, therapy is amazing - and we all need it. Even if you think you don't, you do and maybe in thinking you don't is your first red flag that you need it more than you realize. . 
In the words of Brene Brown, "Vulnerbaility is not weakness; it's our greatest measure of courage... it's what makes us human."

Fast food done right 👌🏻 Lunch is the main meal I prep for at the beginning of the week. Why? I want to be able to throw lunches together in less than 5 or 10 minutes but also have it be nourishing.⁣

Cooking is my creative outlet. It’s therapeutic and enjoyable to me. So I leave breakfast + dinner up in the air most days to take my time/get creative with. And I’m very thankful for the flexibility in my schedule that allows me to do that. ⁣

But lunches, NAH 🙅🏻‍♀ I want a quickie. Just gimme the goods. No energy, effort or decisions required, please and thanks.⁣

Which is exactly what this bowl was thanks to my prep at the start of the week. The only effort required today was sautéing some spinach, chopping a tomato and throwing everything from their containers into this bowl. Spaghetti squash, organic ground turkey, homemade walnut pesto (recipe on my last post,) spinach, tomato, crumbled @miyokoscreamery vegan mozz, red pepper flakes and torn basil.

HEALTHY HABITS 🍃 If you google the word habit, it’s defined as “a settled or regular tendency or practice, especially one that is hard to give up.” If you want to start and STICK to anything on your health and wellness journey, you need to form a HABIT. That means you need to do and repeat that action until you no longer have to think about it and it becomes second nature to you.

A lot of us aren’t brought up drinking over 8 cups of water a day, focusing our meals on whole foods, waking up early or getting home late to workout, etc. but we’ve done it everyday until it became part of our routine. These types of habits aren’t going to happen overnight so don’t get discouraged. Just take it one day at a time and eventually you’ll get there. 😇

one bowl seedy peanut butter freezer cookies! file under: things that are satisfying to eat when your AC is broken. 
3/4c peanut butter
3/4c almond flour
1tbs flaxseed
1tbs sunflower seeds
1tbs cacao nibs
1tbs chia seeds
1tbs maple syrup
mix all ingredients in a bowl. take a spoonful amount and roll into “cookies”. place in freezer for at least 30 min. for the chocolate coating, melt 1/3c chocolate chips (i use @enjoylifefoods) and 1 tbs coconut oil. once cookies have hardened (at least 30 min) dunk in chocolate using a fork and sprinkle with pink salt or flaky sea salt. place back in freezer for a few. enjoy! adapted from @dadaeats 🖀

zoodles & turkey meatballs🍝

super simple & quick dinner. took me less than 30 min to prepare it👏🏌

meatballs:
preheat oven to 425° & line baking sheet with parchment paper. in a bowl, add 1 lb. organic ground turkey, 1 tsp salt, 1/2 tsp pepper, 1/2 tsp garlic powder, 1 tsp italian seasoning, & 1/4 c. almond flour. stir until just combined. form into 1 inch balls (i love using a cookie scoop so that i don’t have to touch the turkey😝) & bake for 14 min. flip over & broil for another 2-3 min.

slice mushrooms & add to a pan with ghee, salt, & pepper. sauté on medium to your liking.

zucchini noodles (zoodles):
put zucchini through a spirilizer. i used a whole zucchini for 1 serving. take a paper towel & squeeze the zoodles, getting out the excess moisture. add to pan & sauté for 2 min on medium. don’t overcook!

top with organic red sauce. i also added some nutritional yeast for a cheesy flavor 😋

Another nourish bowl idea for your weekday lunch! 🌿 It’s safe to say I had a variation of this most weeks during the internship because it’s SO SIMPLE & easy to prep! Plus has that balance of quality protein + healthy fats + fiber rich carbs that we all love to keep the body sustained ✹

The trick is to batch prep the Japanese sweet potatoes & veggies ahead of time 🙌🏟Details below:

2 @vitalfarms pasture raised hard boiled eggs (can buy pre-made!) .
Japanese sweet potato, diced & roasted (dice & roast @ 400 degrees tossed in olive oil & sea salt about 25 min!) .
Leftover roasted veggies (love doing mushrooms & grape tomatoes) .
1/2 sliced avocado .
Mixed greens + drizzle of @soomfoods dreamy tahini for dressing! .
