Summertime means smoothie bowls and gazpacho! I love soups because blending up foods make it WAY easier on your digestion. Gazpacho usually calls for tomatoes & peppers which fall under the nightshade category. People with autoimmune disease are told to avoid nightshade vegetables due to inflammation they may cause so I decided to make a nightshade free gazpacho.
Here’s the recipe: 1 cup water, 2 Persian cucumbers (remove skin for better digestion), 1/2 avocado, handful of greens, 1 tbs olive oil, basil, mint, cilantro, collagen (optional but adds extra protein), all the spices, salt and pepper
Pulse a few times in your blender and there you have it! I topped mine with microgreens, more olive oil, and fresh bread with ghee!
